Energy Balls

A super delicious snack which will not only satisfy your sweet cravings but also give you instant energy.

It has been my go to snack especially during my postpartum period when you need that energy to be on your toes to cater to your baby’s needs.

These energy balls can be consumed as a pre work out snack too. So do give it a try.

  • Preparation Time – 10 mins
  • Cooking Time – 15 mins
  • Total Time – 25 mins
  • Servings – 10

Ingredients:

  • Seedless Dates – 2 Cups
  • Walnuts (Chopped) – 1/4 Cup
  • Cashews (Chopped) – 1/4 Cup
  • Almonds (Chopped) – 1/4 Cup
  • Poppy seeds – 1 Tbsp
  • Grated Coconut – 1/4 Cup
  • Clarified Butter (Ghee) – 2 tsp
  • Powdered Cardamom – 1/4 tsp

Directions:

Coarsely grind the dates in the mixer and set aside.

In a wok, over the medium flame, add chopped walnuts, almonds and cashews. Dry roast them and keep aside.

Now roast poppy seeds for about a minute and set aside.

Into the same pan, add ghee and add grated coconut. Once coconut slightly changes color, add roasted nuts.

Stir them for a minute and add poppy seeds and coarsely ground dates and powdered cardamom.

Stir them well for about two or three minutes.

Shut the flame and immediately pour the mixture to the stainless – steel plate greased with ghee to avoid hardening.

With the help of Spatula, spread the mixture over the plate and let it set in the refrigerator.

After one hour remove the plate from refrigerator, grease your hands with ghee and take small portion of the dry fruits mixture and roll them like small balls (Ladoo shape).

Transfer them to the container and satiate your sweet cravings without a pinch of guilt 😊.
