Pumpkin Soup

Tired of consuming bland diet food? Want to include vitamins and nutrients in daily diet? Is your diet food not satisfying? 

Here is a super food solution that caters to all the aforesaid problems.  So, say bye-bye to dull, tasteless diet foods and say hello to delicious, satisfying and a powerful source of Nutrients and Vitamins – the Pumpkin soup.  

As I said before, Pumpkins are a tremendous source of vitamins and nutrients. And since they are low in calories, they double the bonanza by aiding in weight loss diet. And there is more… to top it all it is absolutely delicious (hmm.. whoever said what tastes yum is never good for health!!)

Enough of ‘Gyan’ now… here you go with the recipe:

Ingredients:

  • Pumpkin (Sliced) – 400 Gms
  • Garlic cloves – 2
  • Onion (small) – 1
  • Pepper (crushed) – 1/2 tsp
  • Salt as per taste
  • Milk – 1/2 cup
  • Fresh Cream for garnishing
  • Low Fat Butter / Olive Oil – 2 tbsp
  • Turmeric – 1/4 tsp

Instructions

Heat 2 tbsp butter or olive oil in a large saucepan, then gently cook 2 finely chopped onions for 5 mins till they turn soft.

Add in cloves of garlic

Add in sliced pumpkin to the pan, then carry on cooking for about 5 mins, stirring occasionally until it starts to soften.

Add water and bring it to a boil

When the pumpkin is cooked let it cool for a while.

After its cooled down, transfer the entire content to a blender to make a smooth paste.

Now, pour the pumpkin paste back into the pan and add milk, turmeric, salt and crushed pepper.

Stir well and cook for about 2 minutes and remove from heat.

Pour the soup into soup bowl and garnish with some more fresh cream and crushed pepper.
