This being one of my favorite, I recently tried to prepare a much healthier version of Carrot Pudding, by replacing sugar with Honey.
And I must say it was a success, since my family really enjoyed it.
So here’s the recipe for you to try.
Preparation time: 10 Minutes
Cooking Time : 10 Minutes
- Carrots (Grated) – 1 Kg
- Ghee – 3 Tablespoons
- Low fat Milk – 2 Cups
- Cardamom Powder – 1 Teaspoon
- Honey – 3 Tablespoons
- Chopped Almonds
Heat the pan on medium flame, when hot, add ghee.
Next, add shredded carrots and keep stirring them for about 6 – 7 minutes.
When the carrots have absorbed the ghee and turns slightly dry add milk and honey.
Add cardamom powder and keep stirring until the milk dries. At this stage you can add few chopped almonds or cashew depending on your preference. Once the milk is dried, remove the pan from stove.
Garnish with rest of the chopped nuts.
Serve warm or cold as per your choice.
The sweetness can be modified as per your taste. Since it differs as per the brand and quality of honey.
Here, I have used Indigenous Honey which I ordered from Amazon.
