Spinach soup

“I am Popeye the Sailor man…” rings a bell?? Back then, I was a huge fan of this epic animated series – ‘Popeye, The Sailor’.  My favourite moment of the show was when Popeye took out the spinach can and ate the entire contents in one go…. transforming into an all-powerful character capable of fighting off the bad guys or rescuing Olive from any difficult scenario. That was undoubtedly the most exciting sight for me, and it made my mornings an incredible pleasure (I used to watch this show while having my breakfast).  Ah… feeling nostalgic as I am writing this now. 

OK… coming back to today’s recipe… inspired by the aforesaid series…. Presenting to you – another super food, loaded with Vitamins and other vital nutrients – The Spinach Soup!!!

To be precise, Spinach is known to be rich in Vitamin A, C and K, iron and manganese.  It’s also a known to be a helpful in getting rid of those irritating love handles.  How do I know all this? I googled it 😊 Additionally, apart from all the health benefits it is also extremely tasty and can be prepared with a span of few minutes. 

So, here is the recipe for the Spinach soup –

Preparation Time – 15 mins

Ingredients:

  • Spinach – 1 bunch
  • Garlic cloves – 6
  • Onion (large) – ½ or 1 small
  • Pepper (crushed) – ½ tsp
  • Salt as per taste
  • Garlic and herbs butter – 2 tablespoon
  • Fresh Cream – ½ cup
  • Grated Paneer (cottage cheese) – for garnishing
  • 1 cup water

Instructions

In a wok, add spinach, garlic cloves, sliced onions and a cup of water.

Heat until well cooked.

Let it cool, then transfer all the ingredients into a blender and blend until smooth

Heat the pan again, add in butter. When butter melts, add blended paste. (I like to add ‘Amul garlic and herbs butter’, since it enhances the flavor. You could choose normal butter as well if ‘garlic and herbs butter’ is not available)

Add fresh cream, salt and pepper powder.

Stir it well and after a minute turn off the heat.

Pour the soup into soup bowl and garnish with grated paneer (cottage cheese).

Hey… one more thing, if you want soup to be a bit more diluted, you could add some warm milk and your soup will instantly be the way you want it.
