Lockdown!!! Quarantine!!! Something that has become a new normal for now (I know you guys would have heard this a few times, so I won’t belabor this more here).  Having said that it still is a pretty tough time for people like me to control my food cravings.  And when you do crave for eating something, the only option left is to end up cooking 😊

So, I got a bit creative with my cooking with whatever was available.   Instead of the usual omelette, I tried Egg Muffins. And let me tell you, as beautiful as it looks, it was super delicious too and certainly makes an ideal breakfast option. 

Its become a hit with my family and now, I end up making this at least twice a week. 

So, here’s the recipe:

Ingredients

  • Eggs – 4
  • Mushrooms (chopped) – 4
  • Tomato (chopped) – 1
  • Onion (small) (chopped) – 1
  • Green Chilies (chopped) – 2
  • Carrot (Grated) – 1
  • Cheese  (Grated) – ½ cup
  • Pepper powder – 1 tsp
  • Salt to taste

Instructions

Preheat oven to 180 degrees C.

Now grease a muffin mould with some coconut oil and set aside

In a bowl, crack eggs and whisk together

Then add onions, chillies, tomatoes and mix them

Now add salt & pepper & mushrooms and stir well

Transfer the mixture evenly into the prepared muffin mould

Add grated carrot and then cheese on top of it.

Bake for 20 – 25 minutes or until eggs are cooked

Once cooked, serve Hot
