Cheesy Chicken kebab
This recipe is a special one! During our anniversary last year, we had dinner at a restaurant, when I came across this kebab in the Menu.
It was so delicious that the very next day (and few days after that) I kept experimenting various methods of recreating the same dish; trying to recollect the various flavors. Finally, after a few attempts, I think I was able to recreate it and after a few more attempts I was able to enhance it further (I think 😊).
So, every time I prepare this kebab, it brings back all the fond memories of that evening 😊. Sharing with all of you the final recipe:

- Cheese – ½ cup
- Ghee – 2 tbsp
- Garam Masala powder – 2 tbsp
- Curry leaves – 8 leaves
- Cashews – 15 -20
- Turmeric powder- 1/2 tsp

Method:
Add in turmeric powder, garam masala powder, gram flour, lemon juice, salt & pepper into minced chicken and mix them well
Coarsely grind together – Coconut, coriander leaves, onion, chilly, garlic, ginger & curry leaves
Add the ground paste into minced chicken
Refrigerate the mixture for 20 minutes
Remove the mixture from refrigerator and add chopped cashews & 1 tbsp ghee & mix again
Grab a handful of paste, roll into a ball and place cheese in the centre and wrap the chicken paste around it and flatten them as shown in the picture.
Dip the kebabs into the eggs mixture
In a pan heat ghee on medium flame and place the kebabs and fry them
Once well-cooked, take out and serve the kebabs with any chutney of your choice
